Description

A moist and tangy homemade version of the beloved Starbucks Lemon Loaf, infused with fresh lemon flavors.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup vegetable oil
  • 2 tbsp unsalted butter, melted
  • 2 tbsp lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice
  • 1/2 tsp lemon zest (optional, for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl; set aside.
  3. Combine the eggs and granulated sugar in a large bowl, whisking until smooth. Add in the sour cream, vegetable oil, and melted butter, mixing thoroughly.
  4. Incorporate the lemon zest, fresh lemon juice, vanilla extract, and lemon extract to the wet mixture.
  5. Gradually add the dry ingredients to the wet ingredients, gently stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes until a toothpick comes out clean.
  7. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Whisk together the powdered sugar and 2-3 tablespoons of fresh lemon juice until smooth to make the glaze. Adjust as needed.
  9. Drizzle the lemon glaze over the cooled loaf and garnish with additional lemon zest if desired. Slice and enjoy!
