Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup crushed hard candies (such as Jolly Ranchers)
Instructions
- In a bowl, whisk together the flour, baking powder, and salt; set aside.
- In another bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
- Gradually add the flour mixture to the wet mixture and mix until a dough forms.
- Divide the dough into two portions, wrapping each in plastic wrap and refrigerating for at least 120 minutes.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled dough to about 1/4 inch thick and cut out desired shapes.
- Use a smaller cutter to remove the center of each cookie.
- Place cookies on a baking sheet and fill the center with crushed hard candies.
- Bake for 8-10 minutes, or until the edges are light golden brown.
- Let cool completely before serving.
Notes
Store leftovers in an airtight container at room temperature or freeze for longer storage. Use different candy colors for a vibrant look.
