A healthy low-carb dinner option with tender chicken breasts filled with fresh spinach and creamy cheese.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper. Mix well until smooth.
- Create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach mixture, securing the opening with toothpicks if necessary.
- Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before slicing or serving.
Notes
Ensure the cream cheese is softened for easy mixing. Don’t overstuff the chicken to avoid mess. Use toothpicks to secure but remove before serving.
