Description

A healthy low-carb dinner option with tender chicken breasts filled with fresh spinach and creamy cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper. Mix well until smooth.
  3. Create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach mixture, securing the opening with toothpicks if necessary.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before slicing or serving.

Notes

Ensure the cream cheese is softened for easy mixing. Don’t overstuff the chicken to avoid mess. Use toothpicks to secure but remove before serving.
