Ingredients

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach (finely chopped)
  • 1 cup Shredded Mozzarella Cheese


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese and olive oil, mixing until well blended.
  3. Beat in the egg until the mixture is smooth.
  4. Sift in the all-purpose flour, baking powder, and salt. Stir until just incorporated.
  5. Fold in the chopped spinach and shredded mozzarella cheese.
  6. Divide the dough into 8 equal portions and shape each into a bagel.
  7. Place the bagels on the prepared baking sheet and bake for 20-25 minutes.
  8. Allow them to cool slightly on a wire rack before enjoying warm.
