Ingredients
- 1 cup Cottage Cheese
- 2 tablespoons Olive Oil
- 1 large Egg
- 1 cup All-Purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2 cups Baby Spinach (finely chopped)
- 1 cup Shredded Mozzarella Cheese
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cottage cheese and olive oil, mixing until well blended.
- Beat in the egg until the mixture is smooth.
- Sift in the all-purpose flour, baking powder, and salt. Stir until just incorporated.
- Fold in the chopped spinach and shredded mozzarella cheese.
- Divide the dough into 8 equal portions and shape each into a bagel.
- Place the bagels on the prepared baking sheet and bake for 20-25 minutes.
- Allow them to cool slightly on a wire rack before enjoying warm.
Notes
For vegan options, substitute egg with ground flaxseed mixed with water. Experiment with different cheeses for varied flavors.
