Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • 3 large eggs
  • 2 cups whole milk
  • ¼ cup water
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium shallot, finely chopped
  • 10 ounces fresh spinach
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of nutmeg
  • 4 ounces cream cheese, softened
  • 1 cup shredded Gruyère cheese
  • ½ cup shredded Mozzarella cheese


Instructions

  1. Whisk together the flour, salt, and pepper in a large bowl.
  2. Crack the eggs into the well. Pour in milk and water.
  3. Whisk from the center, incorporating flour until smooth.
  4. Gently whisk in melted butter until fully combined.
  5. Cover the batter and let it rest in the refrigerator for at least 1 hour.
  6. Heat olive oil in a skillet. Add shallot and cook until soft.
  7. Add garlic and cook for another minute.
  8. Transfer spinach to the skillet, wilting for 3-5 minutes.
  9. Press down spinach to remove excess water.
  10. Mix the drained spinach with cream cheese and other cheeses in a bowl.
  11. Pour batter into the hot skillet and cook crepes for 1-2 minutes each side.
  12. Fill crepes with spinach and cheese mixture and fold over.

Notes

Allow the batter to rest for better texture and use a non-stick skillet for optimal results.
