Ingredients
- 1 cup radishes, thinly sliced
- 1 large avocado
- 4 cups arugula
- 1 cup cooked quinoa
- 4 medium tangerines
- 1/4 cup pistachios
- 1/4 tsp cayenne (optional)
- Salt and pepper (to taste)
- 1/2 cup Vegan Turmeric Ginger Dressing
- 1/4 cup mint (optional, for garnish)
Instructions
- Begin by thinly slicing the radishes and avocado.
- Lay a bed of fresh arugula in a large bowl.
- Top the arugula with cooked quinoa.
- Arrange tangerine slices over the quinoa, followed by the radishes and avocado.
- Sprinkle pistachios over the top and add cayenne, salt, and pepper to taste.
- Drizzle the Vegan Turmeric Ginger Dressing over the salad.
- Garnish with fresh mint if desired.
