Ingredients

  • 1 cup radishes, thinly sliced
  • 1 large avocado
  • 4 cups arugula
  • 1 cup cooked quinoa
  • 4 medium tangerines
  • 1/4 cup pistachios
  • 1/4 tsp cayenne (optional)
  • Salt and pepper (to taste)
  • 1/2 cup Vegan Turmeric Ginger Dressing
  • 1/4 cup mint (optional, for garnish)


Instructions

  1. Begin by thinly slicing the radishes and avocado.
  2. Lay a bed of fresh arugula in a large bowl.
  3. Top the arugula with cooked quinoa.
  4. Arrange tangerine slices over the quinoa, followed by the radishes and avocado.
  5. Sprinkle pistachios over the top and add cayenne, salt, and pepper to taste.
  6. Drizzle the Vegan Turmeric Ginger Dressing over the salad.
  7. Garnish with fresh mint if desired.
