A simple yet delicious dish that combines garlic and fresh spinach, perfect for busy weeknights.
Ingredients
- 8 ounces spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, thinly sliced
- 6 cups fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Freshly grated Parmesan cheese, for serving
- Lemon wedges, for serving
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat olive oil over medium heat. Add the sliced garlic and sauté until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
- Toss the cooked spaghetti into the skillet with the spinach and garlic. If needed, add a splash of reserved pasta water to loosen the mixture.
- Season with red pepper flakes, salt, and pepper to taste.
- Serve with freshly grated Parmesan cheese and lemon wedges on the side.
Notes
Don’t overcook the garlic to avoid bitterness. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
