Description

A delicious and filling one-pan dish combining ground beef, sweet potatoes, black beans, and colorful vegetables, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil
  • Chopped cilantro for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onions and bell pepper, and sauté until soft.
  3. Stir in garlic and cook for an additional minute.
  4. Add ground beef, cooking until browned.
  5. Mix in sweet potatoes, chili powder, cumin, salt, and pepper.
  6. Cover and cook for about 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
  7. Stir in black beans and cook for another 5 minutes.
  8. Serve hot, garnished with chopped cilantro.

Notes

For extra flavor, add a squeeze of lime juice before serving. Swap ground beef for ground turkey or chicken for a lighter option. Add diced jalapeños for spice.
