Ingredients
- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil
- Chopped cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced onions and bell pepper, and sauté until soft.
- Stir in garlic and cook for an additional minute.
- Add ground beef, cooking until browned.
- Mix in sweet potatoes, chili powder, cumin, salt, and pepper.
- Cover and cook for about 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
- Stir in black beans and cook for another 5 minutes.
- Serve hot, garnished with chopped cilantro.
Notes
For extra flavor, add a squeeze of lime juice before serving. Swap ground beef for ground turkey or chicken for a lighter option. Add diced jalapeños for spice.
