Description

Delightful and versatile soft cut-out sugar cookies, perfect for any occasion.


Ingredients

  • 1 cup salted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 whole egg (at room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups powdered sugar
  • 3-4 tablespoons whole milk
  • 1/4 teaspoon vanilla extract (for icing)
  • 1/8 teaspoon almond extract (for icing)


Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the whole egg, vanilla extract, and almond extract. Mix well until combined.
  3. In a separate bowl, whisk together the all-purpose flour and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  5. Divide the dough in half, wrap each portion in plastic wrap, and chill in the refrigerator for at least 2 hours or overnight.
  6. Preheat your oven to 350°F (175°C).
  7. Roll out one half of the dough on a lightly floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes and place them on ungreased baking sheets.
  8. Bake for 8-10 minutes until the edges are lightly golden. Let the cookies cool on the baking sheets before transferring them to a wire rack to cool completely.
  9. For icing, combine powdered sugar, whole milk, and additional vanilla and almond extracts in a mixing bowl. Whisk until smooth.
  10. Once the cookies are completely cooled, use a piping bag or knife to spread the icing and add decorations while the icing is still wet.

Notes

Chill the dough for easier rolling and to prevent spreading. Experiment with flavors and icing designs.
