Ingredients
- 1 ½ cups (300 grams) granulated sugar
- 1 cup (227 grams) unsalted butter, softened
- 2 large eggs
- 2 ½ cups (312 grams) all-purpose flour
- 2 tsp vanilla extract
- ½ tsp salt
- ½ tsp baking powder

Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt until well combined.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the eggs and vanilla extract, mixing until smooth.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Scoop and roll cookie dough into spheres, then coat in granulated sugar.
- Place cookie balls on the prepared baking sheets, spaced apart.
- Bake for 8-10 minutes, until edges are golden but centers are soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
