A comforting dish of tender chicken thighs smothered in a rich and creamy gravy, perfect for any occasion.
Ingredients
- 4 skin-on chicken thighs (about 1.5 lbs)
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 2 tbsp soy sauce
Instructions
- Season the chicken thighs with salt, pepper, and smoked paprika. Let sit at room temperature for 15–20 minutes.
- In a large skillet over medium heat, heat olive oil and sauté onions until translucent, about 5–7 minutes. Stir in minced garlic and cook for 1 minute.
- Add seasoned chicken thighs skin-side down and brown for 5 minutes on each side. Remove temporarily.
- Sprinkle flour into the skillet drippings to create a roux and cook for 1–2 minutes, stirring continuously.
- Gradually whisk in chicken broth and soy sauce until smooth. Add heavy cream and thyme, mixing until slightly thickened.
- Return chicken thighs to the skillet, cover, and simmer on low heat for 20-25 minutes until tender and fully cooked.
Notes
Don’t rush the browning for enhanced flavor. Fresh herbs enhance the gravy’s aroma and taste.
