Description

A comforting dish of tender chicken thighs smothered in a rich and creamy gravy, perfect for any occasion.


Ingredients

  • 4 skin-on chicken thighs (about 1.5 lbs)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 2 tbsp soy sauce


Instructions

  1. Season the chicken thighs with salt, pepper, and smoked paprika. Let sit at room temperature for 15–20 minutes.
  2. In a large skillet over medium heat, heat olive oil and sauté onions until translucent, about 5–7 minutes. Stir in minced garlic and cook for 1 minute.
  3. Add seasoned chicken thighs skin-side down and brown for 5 minutes on each side. Remove temporarily.
  4. Sprinkle flour into the skillet drippings to create a roux and cook for 1–2 minutes, stirring continuously.
  5. Gradually whisk in chicken broth and soy sauce until smooth. Add heavy cream and thyme, mixing until slightly thickened.
  6. Return chicken thighs to the skillet, cover, and simmer on low heat for 20-25 minutes until tender and fully cooked.

Notes

Don’t rush the browning for enhanced flavor. Fresh herbs enhance the gravy’s aroma and taste.
