Ingredients
- 4-6 bone-in chicken thighs
- 1 green pepper, sliced thin
- 1 onion, sliced thin
- 1 red pepper, sliced thin
- 1/2 cup chicken broth
- 1/8 cup whole milk
- 4 tablespoons unsalted butter
- 6 tablespoons flour (1 tablespoon to coat the chicken, 3 tablespoons to coat the peppers, 2 tablespoons for gravy)
- 1 teaspoon chicken bouillon
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried herbs
- 2 teaspoons paprika
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Season the chicken thighs generously with spices and 1 tablespoon of flour.
- In a hot skillet, melt the butter until it begins to sizzle. Sear the seasoned chicken until golden brown on both sides. Once browned, remove the chicken from the pan and set it aside.
- In the same skillet, add the sliced onions and bell peppers. Sauté until the vegetables are tender and fragrant, about 5 minutes.
- Add an additional tablespoon of butter to the pan. Sprinkle in the remaining 3 tablespoons of flour to create a roux. Continuously stir until the mixture achieves a smooth consistency.
- Return the chicken to the skillet. Add in the chicken broth, mixing well.
- Cover the dish and bake in the preheated oven for 20 minutes.
- After 20 minutes, carefully remove some of the cooking liquid and mix it with equal parts flour to create gravy. Pour it back into the baking dish.
- Continue to bake uncovered for an additional 20 minutes at 375 degrees Fahrenheit. Mix well before serving.
Notes
Consider adding other vegetables like mushrooms or zucchini for extra nutrition and flavor. For a gluten-free version, use cornstarch instead of flour.
