Description

Ingredients

  • 1 cup black-eyed peas, soaked overnight
  • 4 cups collard greens, chopped
  • 1 carrot, diced
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp smoked paprika
  • 1 cup tomatoes, diced
  • 1/2 tsp red pepper flakes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 6 cups vegetable broth


Instructions

  1. Rinse and soak the black-eyed peas overnight, then drain.
  2. In a large pot, sauté the onion, garlic, celery, and carrot until softened.
  3. Add the collard greens and cook until wilted.
  4. Stir in the soaked black-eyed peas, tomatoes, and all the spices.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and simmer for about 45 minutes, or until the peas are tender.
  7. Adjust seasoning to taste and serve warm.

Notes

Add smoked turkey or ham for extra flavor. Use coconut milk for a creamier texture.
