A hearty and nourishing soup packed with black-eyed peas, collard greens, and a medley of spices for a comforting meal.
Ingredients
- 1 cup black-eyed peas, soaked overnight
- 4 cups collard greens, chopped
- 1 carrot, diced
- 1 onion, chopped
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp basil
- 1 tsp smoked paprika
- 1 cup tomatoes, diced
- 1/2 tsp red pepper flakes
- 1 tsp garlic powder
- 1 tsp onion powder
- 6 cups vegetable broth
Instructions
- Rinse and soak the black-eyed peas overnight, then drain.
- In a large pot, sauté the onion, garlic, celery, and carrot until softened.
- Add the collard greens and cook until wilted.
- Stir in the soaked black-eyed peas, tomatoes, and all the spices.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for about 45 minutes, or until the peas are tender.
- Adjust seasoning to taste and serve warm.
Notes
Add smoked turkey or ham for extra flavor. Use coconut milk for a creamier texture.
