Ingredients

  • 1 lb Boneless Chicken Breasts/Thighs
  • 2 cups Corn
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese
  • 1 Lime
  • 2 cloves Garlic
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (Optional)


Instructions

  1. Begin by placing the boneless chicken breasts or thighs at the bottom of your slow cooker.
  2. Add the corn over the chicken, followed by cream cheese, cotija cheese, freshly squeezed lime juice, minced garlic, chili powder, smoked paprika, and onion powder.
  3. Cover the slow cooker and cook on low for about 360-420 minutes or on high for about 180-240 minutes.
  4. Once cooked, shred the chicken with two forks, mixing everything together until well-combined. If desired, garnish with fresh cilantro before serving.

Notes

You can use frozen chicken for this recipe, just adjust cooking times as needed. Great for meal prep!
