Ingredients
- 1 lb Boneless Chicken Breasts/Thighs
- 2 cups Corn
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese
- 1 Lime
- 2 cloves Garlic
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (Optional)
Instructions
- Begin by placing the boneless chicken breasts or thighs at the bottom of your slow cooker.
- Add the corn over the chicken, followed by cream cheese, cotija cheese, freshly squeezed lime juice, minced garlic, chili powder, smoked paprika, and onion powder.
- Cover the slow cooker and cook on low for about 360-420 minutes or on high for about 180-240 minutes.
- Once cooked, shred the chicken with two forks, mixing everything together until well-combined. If desired, garnish with fresh cilantro before serving.
Notes
You can use frozen chicken for this recipe, just adjust cooking times as needed. Great for meal prep!
