Ingredients
- 2 pounds of ripe tomatoes, halved
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil
- Fresh basil for garnish (optional)
Instructions
- Preheat your slow cooker.
- In a bowl, toss the halved tomatoes, chopped onion, and minced garlic with olive oil, salt, and pepper.
- Transfer the mixture to the slow cooker.
- Add vegetable broth, dried basil, and oregano.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, use an immersion blender to puree the soup until smooth.
- Adjust seasoning to taste, garnish with fresh basil if desired, and serve warm.
Notes
Use ripe tomatoes for the best flavor. If they are not in season, canned tomatoes work well.
