Ingredients
- 1 pound ground beef or turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 cups beef or vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- In a bowl, combine ground meat, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well and form into meatballs.
- Place the meatballs in the slow cooker.
- Add the broth, carrots, celery, tomatoes, and Italian seasoning to the slow cooker.
- Stir gently to combine.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes until the meatballs are cooked through and the vegetables are tender.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, add herbs or spices to the broth. Ensure meatballs are not too large for even cooking.
