Description

Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups beef or vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish


Instructions

  1. In a bowl, combine ground meat, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well and form into meatballs.
  2. Place the meatballs in the slow cooker.
  3. Add the broth, carrots, celery, tomatoes, and Italian seasoning to the slow cooker.
  4. Stir gently to combine.
  5. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes until the meatballs are cooked through and the vegetables are tender.
  6. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, add herbs or spices to the broth. Ensure meatballs are not too large for even cooking.
