Description
A delicious and easy one-pot meal of chicken breasts cooked with lemon, herbs, and rice, perfect for busy schedules.
Ingredients
- 4 chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 3 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups rice
- 4 cups water
Instructions
- In a slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts to the slow cooker and coat them with the lemon herb mixture.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
- In the last hour of cooking, add the rice and water to the slow cooker, stirring gently.
- Once cooked, fluff the rice with a fork and serve the chicken on top.
Notes
Sear the chicken for extra flavor and adjust seasoning to taste.
