Description

A delicious and easy one-pot meal of chicken breasts cooked with lemon, herbs, and rice, perfect for busy schedules.


Ingredients

  • 4 chicken breasts
  • 1 cup chicken broth
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 3 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups rice
  • 4 cups water


Instructions

  1. In a slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts to the slow cooker and coat them with the lemon herb mixture.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  4. In the last hour of cooking, add the rice and water to the slow cooker, stirring gently.
  5. Once cooked, fluff the rice with a fork and serve the chicken on top.

Notes

Sear the chicken for extra flavor and adjust seasoning to taste.
