Ingredients

  • 4 chicken thighs
  • 1 lemon (juice and zest)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 cup chicken broth
  • 2 cups long-grain white rice
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. In a slow cooker, combine the chicken thighs, lemon juice and zest, minced garlic, chopped rosemary, and thyme. Season with salt and pepper.
  2. Pour the chicken broth over the mixture.
  3. Cover and cook on low for about 360 minutes or until the chicken is tender and cooked through.
  4. About 30 minutes before serving, add the rice and mix well.
  5. Once the rice is cooked and has absorbed the liquid, fluff with a fork and serve garnished with chopped parsley.

Notes

For added flavor, use bone-in chicken thighs. Adjust seasoning to taste before serving.
