Ingredients
- 4 chicken thighs
- 1 lemon (juice and zest)
- 2 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- 1 cup chicken broth
- 2 cups long-grain white rice
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a slow cooker, combine the chicken thighs, lemon juice and zest, minced garlic, chopped rosemary, and thyme. Season with salt and pepper.
- Pour the chicken broth over the mixture.
- Cover and cook on low for about 360 minutes or until the chicken is tender and cooked through.
- About 30 minutes before serving, add the rice and mix well.
- Once the rice is cooked and has absorbed the liquid, fluff with a fork and serve garnished with chopped parsley.
Notes
For added flavor, use bone-in chicken thighs. Adjust seasoning to taste before serving.
