Ingredients
- 1 pound dried black-eyed peas
- 1 smoked turkey leg
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional)
- 2 bay leaves
Instructions
- Rinse and sort the black-eyed peas, removing any debris.
- In the slow cooker, combine the black-eyed peas, smoked turkey leg, onion, garlic, chicken broth, salt, black pepper, cayenne pepper (if using), and bay leaves.
- Cover and cook on low for 8-10 hours, or until the peas are tender.
- Remove the turkey leg, shred the meat, and return it to the slow cooker.
- Serve warm, and enjoy your New Year’s dish!
Notes
For additional tenderness, soak the black-eyed peas overnight. Adjust seasoning to taste before serving.
