Ingredients

  • 1 pound dried black-eyed peas
  • 1 smoked turkey leg
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • 2 bay leaves


Instructions

  1. Rinse and sort the black-eyed peas, removing any debris.
  2. In the slow cooker, combine the black-eyed peas, smoked turkey leg, onion, garlic, chicken broth, salt, black pepper, cayenne pepper (if using), and bay leaves.
  3. Cover and cook on low for 8-10 hours, or until the peas are tender.
  4. Remove the turkey leg, shred the meat, and return it to the slow cooker.
  5. Serve warm, and enjoy your New Year’s dish!

Notes

For additional tenderness, soak the black-eyed peas overnight. Adjust seasoning to taste before serving.
