Description
Hearty comfort food with tender beef and flavorful gravy served over mashed potatoes and bread.
Ingredients
- 2 pounds beef roast (chuck or round)
- 1 medium onion, sliced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 6 slices bread (white or Texas toast)
- 4 cups mashed potatoes (homemade or prepared)
Instructions
- Place the beef roast in the slow cooker. Season generously with salt and black pepper.
- Layer the sliced onion on top of the beef.
- In a separate bowl, mix together the beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and dried thyme. Pour this mixture over the meat and onions in the slow cooker.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is incredibly tender.
- Remove the beef from the slow cooker and shred using two forks. In a small bowl, mix cornstarch with cold water to create a slurry. Stir into the liquid remaining in the slow cooker and cook on high for 10-15 minutes, or until the gravy thickens.
- Serve the shredded beef over slices of bread topped with mashed potatoes and a generous spoonful of gravy.
Notes
Choose chuck roast for best flavor. Add vegetables like carrots or celery for more nutrition.
