Description

Hearty comfort food with tender beef and flavorful gravy served over mashed potatoes and bread.


Ingredients

  • 2 pounds beef roast (chuck or round)
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 6 slices bread (white or Texas toast)
  • 4 cups mashed potatoes (homemade or prepared)


Instructions

  1. Place the beef roast in the slow cooker. Season generously with salt and black pepper.
  2. Layer the sliced onion on top of the beef.
  3. In a separate bowl, mix together the beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and dried thyme. Pour this mixture over the meat and onions in the slow cooker.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is incredibly tender.
  5. Remove the beef from the slow cooker and shred using two forks. In a small bowl, mix cornstarch with cold water to create a slurry. Stir into the liquid remaining in the slow cooker and cook on high for 10-15 minutes, or until the gravy thickens.
  6. Serve the shredded beef over slices of bread topped with mashed potatoes and a generous spoonful of gravy.

Notes

Choose chuck roast for best flavor. Add vegetables like carrots or celery for more nutrition.
