Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup parsnips, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Sear the chicken breasts on both sides until golden brown.
- In a slow cooker, combine chicken breasts, carrots, potatoes, parsnips, onion, garlic, chicken broth, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 6 to 8 hours or until the chicken is cooked through and the vegetables are tender.
- Garnish with fresh parsley before serving.
