Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the chicken breasts on both sides until golden brown.
  2. In a slow cooker, combine chicken breasts, carrots, potatoes, parsnips, onion, garlic, chicken broth, thyme, rosemary, salt, and pepper.
  3. Cover and cook on low for 6 to 8 hours or until the chicken is cooked through and the vegetables are tender.
  4. Garnish with fresh parsley before serving.
