Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 3/4 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- Food coloring gel or natural, optional
Instructions
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy for 3-5 minutes.
- Beat in the eggs one at a time, then add the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Divide the dough in half; add food coloring if desired and shape into logs.
- Wrap in plastic wrap and chill for at least 3 hours or overnight.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Slice chilled logs into 1/4 inch rounds and place on the sheets.
- Bake for 8-11 minutes or until edges are golden.
- Cool on baking sheets for 5 minutes before transferring to a wire rack.
- Store in an airtight container.
Notes
Make sure your butter is softened for easy mixing. Chill the dough well for cleaner slices. Experiment with different food colorings for fun designs.
