Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • Food coloring gel or natural, optional


Instructions

  1. In a large bowl, cream the softened butter and granulated sugar until light and fluffy for 3-5 minutes.
  2. Beat in the eggs one at a time, then add the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  5. Divide the dough in half; add food coloring if desired and shape into logs.
  6. Wrap in plastic wrap and chill for at least 3 hours or overnight.
  7. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  8. Slice chilled logs into 1/4 inch rounds and place on the sheets.
  9. Bake for 8-11 minutes or until edges are golden.
  10. Cool on baking sheets for 5 minutes before transferring to a wire rack.
  11. Store in an airtight container.

Notes

Make sure your butter is softened for easy mixing. Chill the dough well for cleaner slices. Experiment with different food colorings for fun designs.
