Description
A vibrant, crunchy broccoli salad with tangy dressing, dried fruit, and smoked turkey bacon, perfect for summer cookouts.
Ingredients
- 6 cups small broccoli florets (about 1.5–2 heads)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup finely chopped red onion
- 1/2 cup dried cranberries or golden raisins
- 1/2 cup sunflower seeds (raw or roasted, unsalted)
- 6 slices smoked turkey bacon, cooked until crisp and chopped
- 3/4 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 1–2 tablespoons honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1 tablespoon lemon juice for extra brightness
Instructions
- Prepare the broccoli: Rinse and dry the broccoli, then cut into bite-sized florets.
- Cook the smoked turkey bacon in a skillet until crisp; drain and chop.
- Make the dressing by whisking together mayonnaise, Greek yogurt, vinegar, honey, salt, and pepper.
- Combine shredded cheddar, red onion, dried cranberries, and sunflower seeds in a bowl.
- Add the broccoli and pour the dressing over; fold everything gently to coat.
- Stir in the bacon and chill for at least 30 minutes before serving.
Notes
For a lighter dressing, use more Greek yogurt and less mayonnaise. Store the dressing separately if prepping ahead.
