Description

Fresh MIKI is a delightful one-pot meal featuring fresh miki noodles, pork belly, and seasonal vegetables, perfect for family dinners or gatherings.


Ingredients

  • 450g fresh miki noodles
  • 350g pork belly
  • 1 liter water (or more)
  • 1 pc white onion
  • 4 cloves garlic
  • 1 pc chayote
  • 1 pc carrot
  • Cabbage (to taste)
  • 1 pc egg
  • A bit of oil
  • Chicken powder (to taste)
  • Salt and pepper (to taste)
  • 2 tbsp cassava flour or cornstarch
  • Water for slurry


Instructions

  1. Rinse the fresh miki noodles with hot water, then drain well.
  2. Heat a pan over medium heat and add a bit of oil, then sauté minced garlic and chopped onion until fragrant.
  3. Add sliced pork belly, sauté for about 5 minutes until browned.
  4. Pour in 1 liter of water and cover, allowing to boil. Simmer until pork is fork-tender (15-20 minutes).
  5. Add chayote and carrot, sauté for additional 1 minute.
  6. Toss in rinsed miki noodles and let it boil once more.
  7. Season with chicken powder, salt, and pepper. Continue cooking until noodles are cooked through.
  8. Add chopped cabbage and slurry made from cassava flour or cornstarch mixed with water. Stir and cook for another 2 minutes.
  9. Turn off heat and crack egg into the mixture, stirring until thickened.

Notes

For a vegetarian version, substitute pork belly with tofu or tempeh. Adjust seasoning to taste and consider adding fresh herbs before serving.
