Description

A delightful dessert combining fresh blueberries and creamy cream cheese atop a moist cake with a crumbly topping.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1 cup fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour (for topping)
  • 1/4 cup unsalted butter (melted, for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together 1 1/2 cups of flour, baking powder, baking soda, and salt. Set aside.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract and cream cheese until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Gently fold in blueberries.
  6. In a small bowl, combine brown sugar, oats, 1/4 cup flour, and melted butter for the crumb topping.
  7. Pour half of the batter into the prepared pan, sprinkle half of the crumb topping, add remaining batter, and top with the rest of the crumbs.
  8. Bake for 40-45 minutes or until a toothpick inserted comes out clean. Allow to cool before serving.

Notes

For best results, use room temperature ingredients and do not overmix the batter. Check for doneness a few minutes before the baking time is complete.
