A delightful dessert combining fresh blueberries and creamy cream cheese atop a moist cake with a crumbly topping.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1 cup fresh blueberries
- 1/2 cup brown sugar
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour (for topping)
- 1/4 cup unsalted butter (melted, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together 1 1/2 cups of flour, baking powder, baking soda, and salt. Set aside.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract and cream cheese until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Gently fold in blueberries.
- In a small bowl, combine brown sugar, oats, 1/4 cup flour, and melted butter for the crumb topping.
- Pour half of the batter into the prepared pan, sprinkle half of the crumb topping, add remaining batter, and top with the rest of the crumbs.
- Bake for 40-45 minutes or until a toothpick inserted comes out clean. Allow to cool before serving.
Notes
For best results, use room temperature ingredients and do not overmix the batter. Check for doneness a few minutes before the baking time is complete.
