A comforting and delicious shepherd’s pie using ground turkey and a mix of hearty vegetables topped with creamy mashed potatoes.
Ingredients
- 1 pound ground turkey
- 1 cup diced onion
- 2 cloves garlic, minced
- 2 cups mixed vegetables (peas, carrots, corn)
- 2 cups prepared mashed potatoes
- 1 cup chicken broth
- Salt, to taste
- Black pepper, to taste
Instructions
- In a large skillet over medium heat, brown the ground turkey with diced onion and minced garlic, stirring occasionally until the turkey is fully cooked and onions are translucent.
- Incorporate the mixed vegetables and pour in the chicken broth. Stir well and simmer until the broth thickens slightly and vegetables are heated through.
- Season the turkey and vegetable mixture with salt and black pepper to taste.
- Transfer the mixture into a standard baking dish, and spread the prepared mashed potatoes over the top to cover completely.
- Place in a preheated oven at 375°F (190°C) and bake for 30 minutes or until the top is lightly golden and the filling bubbles.
Notes
Use fresh or frozen vegetables for convenience. Add hot sauce or chili flakes for a spicy kick. For creamier mashed potatoes, mix in sour cream or cream cheese.
