A vibrant and easy-to-make meal combining smoked sausage, cheese-filled tortellini, and colorful vegetables, all roasted to perfection on one sheet pan.
Ingredients
- 12 oz fresh or frozen cheese-filled tortellini
- 12 oz pre-cooked smoked sausage, sliced into bite-sized rounds
- 2 medium bell peppers, cut into strips
- 1 medium red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the smoked sausage into bite-sized rounds and chop the bell peppers into strips, slice the red onion, and halve the cherry tomatoes.
- On a large sheet pan, spread out the sausage, bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, then sprinkle the Italian seasoning, garlic powder, salt, and black pepper evenly over the top. Toss gently to coat.
- Roast for 15 minutes.
- Add the cheese tortellini, drizzle with more olive oil, and toss gently to combine.
- Return to the oven and roast for another 10-12 minutes until tortellini is tender and browned.
- Let it cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
