Ingredients

  • 14 oz chicken or turkey sausage, sliced 1/2-inch thick
  • 2 medium sweet potatoes, peeled and cubed (1/2-inch)
  • 2 cups broccoli florets (1/2-inch)
  • 1 tablespoon unsalted butter (or olive oil)
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce (or coconut aminos for a gluten-free alternative)
  • 1 tablespoon apple cider vinegar
  • Kosher salt and black pepper, to taste
  • 2 tablespoons minced fresh parsley


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. Add the sliced sausage, cubed sweet potatoes, and broccoli florets to the lined sheet pan, spreading everything out evenly in a single layer.
  3. In a small saucepan, melt the butter over medium heat and sauté the minced garlic for about 30 to 60 seconds until fragrant.
  4. Stir in the honey, soy sauce, apple cider vinegar, salt, and pepper. Simmer the sauce for 2 to 3 minutes.
  5. Pour the honey garlic sauce over the sausage and vegetable mixture, tossing to coat.
  6. Roast in the preheated oven for about 25 to 30 minutes, stirring halfway through until sweet potatoes are tender and caramelized.
  7. Sprinkle with fresh parsley before serving warm.

Notes
