A comforting and delicious one-pan meal featuring sausage, sweet potatoes, and broccoli, all coated in a sweet and tangy honey garlic sauce.
Ingredients
- 14 oz chicken or turkey sausage, sliced 1/2-inch thick
- 2 medium sweet potatoes, peeled and cubed (1/2-inch)
- 2 cups broccoli florets (1/2-inch)
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce (or coconut aminos for a gluten-free alternative)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Add the sliced sausage, cubed sweet potatoes, and broccoli florets to the lined sheet pan, spreading everything out evenly in a single layer.
- In a small saucepan, melt the butter over medium heat and sauté the minced garlic for about 30 to 60 seconds until fragrant.
- Stir in the honey, soy sauce, apple cider vinegar, salt, and pepper. Simmer the sauce for 2 to 3 minutes.
- Pour the honey garlic sauce over the sausage and vegetable mixture, tossing to coat.
- Roast in the preheated oven for about 25 to 30 minutes, stirring halfway through until sweet potatoes are tender and caramelized.
- Sprinkle with fresh parsley before serving warm.
Notes
Use parchment paper for easy clean-up. Experiment with different vegetables or sausages for variety.
