Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 red onion, diced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Feta cheese for topping (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the chicken breasts to the marinade and coat them well. Let them marinate for at least 30 minutes.
- On a sheet pan, arrange the marinated chicken and surround it with cherry tomatoes, zucchini, bell pepper, and red onion.
- Drizzle any remaining marinade over the vegetables.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
