Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 red onion, diced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Feta cheese for topping (optional)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Add the chicken breasts to the marinade and coat them well. Let them marinate for at least 30 minutes.
  4. On a sheet pan, arrange the marinated chicken and surround it with cherry tomatoes, zucchini, bell pepper, and red onion.
  5. Drizzle any remaining marinade over the vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
