Description

A delightful, one-pan meal combining tender chicken with crunchy cashews, vibrant bell peppers, and savory aromatics, perfect for busy weeknight dinners.


Ingredients

  • 1 lb Boneless, Skinless Chicken Breasts
  • 1/4 cup Soy Sauce
  • 2 tbsp Honey
  • 2 tbsp Rice Vinegar
  • 2 tbsp Sesame Oil
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • To taste Salt
  • To taste Pepper
  • 2 cups Bell Peppers, sliced
  • 1 medium Onion, sliced
  • 1/2 cup Unsalted Raw Cashews
  • 1/4 cup Cilantro, optional


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, salt, and pepper.
  3. Cut chicken into bite-sized pieces and marinate in the mixture for at least 15 minutes.
  4. Slice bell peppers and onion into bite-sized pieces.
  5. On a sheet pan, spread out the marinated chicken, bell peppers, onions, and cashews.
  6. Bake for 25-30 minutes until chicken is cooked through and veggies are tender.
  7. Once done, garnish with cilantro before serving.

Notes

Marinate chicken longer for more flavor; cut ingredients uniformly for even cooking.
