Description

A delightful, creamy dessert inspired by the classic Shamrock Shake, perfect for St. Patrick’s Day celebrations.


Ingredients

  • 12 full sheets graham crackers
  • 2 tbsp brown sugar
  • 0.5 cup (1 stick) butter, melted
  • 2.5 cups milk, cold
  • 0.25 tsp green food coloring (gel preferred)
  • 2 tsp mint extract
  • 1 box (5.1 oz) instant vanilla pudding mix
  • 1 container (8 oz) whipped topping, thawed


Instructions

  1. Begin by preparing the crust. In a food processor, pulse the graham crackers and brown sugar until they turn into fine crumbs. With the motor running, slowly drizzle in the melted butter until the mixture resembles wet sand.
  2. Press the crumb mixture firmly into a greased 9-inch pie dish, creating an even layer. Once complete, place the crust in the freezer to chill for 15-20 minutes.
  3. While the crust is chilling, prepare the filling. In a large bowl, whisk together the cold milk, green food coloring, and mint extract until well combined and a nice shade of green is achieved.
  4. Next, add the instant vanilla pudding mix to the milk mixture and whisk vigorously for about 2-3 minutes until the mixture thickens. Allow the mixture to stand for 5 minutes to set further.
  5. Gently fold the thawed whipped topping into the pudding mixture using a spatula. Ensure that the mixture is smooth and free of any white streaks.
  6. Spoon the green filling into the frozen crust, smoothing out the top. Cover the pie loosely and place it back in the freezer for at least 360 minutes, or preferably overnight, until it is completely firm.
  7. When ready to serve, let the pie sit at room temperature for 5-10 minutes before slicing. This allows for cleaner cuts. Garnish with whipped cream, cherries, or chocolate shavings if desired. Serve cold and enjoy!

Notes

For best texture, freeze the pie overnight. Adjust the amount of mint extract to your preference.
