Description

Delightful scones bursting with cheddar cheese and ham, perfect for breakfast or a savory snack.


Ingredients

  • 2 cups (250g) all-purpose flour, plus more for hands and work surface
  • 1 Tablespoon (12g) granulated sugar
  • 2 and 1/2 teaspoons baking powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 Tablespoons chopped fresh chives
  • 1 cup (about 100g) shredded cheddar cheese
  • 1/2 cup (113g) unsalted butter, frozen
  • 2/3 cup (160ml) cold buttermilk, plus 1 Tablespoon for brushing
  • 1 large egg, separated
  • 3/4 cup (about 110g) finely chopped ham
  • Optional for topping: flaky sea salt


Instructions

  1. Whisk together the flour, sugar, baking powder, garlic powder, salt, and pepper in a large bowl.
  2. Stir in the chopped chives and shredded cheese until evenly distributed.
  3. Grate the frozen butter and add it to the flour mixture, combining until it resembles pea-sized crumbs.
  4. Whisk the 2/3 cup of buttermilk and egg yolk together. Pour over the flour mixture, then add the ham and mix until clumping.
  5. Transfer the dough to a floured surface and shape into a ball, then flatten into an 8-inch disc and cut into 8 wedges.
  6. Combine the egg white and 1 tablespoon of buttermilk and brush over scones; sprinkle with flaky sea salt if desired.
  7. Preheat oven to 400°F (204°C) and bake scones for 22-25 minutes or until golden brown.
  8. Cool on baking sheets for a few minutes before serving.

Notes

Use cold ingredients for flakier scones. Don’t overmix to avoid tough texture.
