Ingredients

  • 14 oz chicken or turkey sausage (cut into 2-inch slices)
  • 2 medium sweet potatoes (peeled and cubed)
  • 2 cups broccoli florets
  • 4 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped for garnish)
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp unsalted butter (melted)
  • Salt and pepper (to taste)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes uniformly.
  3. In a small bowl, whisk together honey, soy sauce, apple cider vinegar, melted butter, and minced garlic until smooth.
  4. On a large baking sheet, spread out the sweet potatoes and sausage. Drizzle with half of the honey garlic sauce and toss to coat. Add broccoli and drizzle the remaining sauce.
  5. Roast for 25-30 minutes, stirring halfway through, until everything is caramelized and tender.
  6. Remove from the oven, let it cool for a few minutes, and adjust seasoning with salt and pepper. Garnish with chopped parsley.
  7. Serve warm and enjoy!
