An easy one-pan meal featuring savory sausage and sweet potatoes, drizzled in a tangy honey garlic sauce, perfect for busy weeknights.
Ingredients
- 14 oz chicken or turkey sausage (cut into 2-inch slices)
- 2 medium sweet potatoes (peeled and cubed)
- 2 cups broccoli florets
- 4 cloves garlic (minced)
- 2 tbsp fresh parsley (chopped for garnish)
- ¼ cup honey
- ¼ cup low-sodium soy sauce
- 1 tbsp apple cider vinegar
- 1 tbsp unsalted butter (melted)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes uniformly.
- In a small bowl, whisk together honey, soy sauce, apple cider vinegar, melted butter, and minced garlic until smooth.
- On a large baking sheet, spread out the sweet potatoes and sausage. Drizzle with half of the honey garlic sauce and toss to coat. Add broccoli and drizzle the remaining sauce.
- Roast for 25-30 minutes, stirring halfway through, until everything is caramelized and tender.
- Remove from the oven, let it cool for a few minutes, and adjust seasoning with salt and pepper. Garnish with chopped parsley.
- Serve warm and enjoy!
