This decadent dessert combines the rich, creamy texture of cheesecake with the warm flavors of apple pie, all topped with a delightful salted caramel sauce.
Ingredients
- 4 medium apples, sliced
- 3 tbsp salted butter
- 1-2 tbsp apple cider
- 1/3 cup light brown sugar, packed
- 1 and 1/4 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1/8 tsp allspice
- 1-2 tsp lemon juice, to taste
- 2 tsp cornstarch
- 2 tsp water
- 3 cups cinnamon graham cracker crumbs
- 1/2 cup + 3 tbsp salted butter, melted
- 32 ounces cream cheese, at room temperature
- 1 and 1/2 cups granulated sugar
- 4 large eggs, at room temperature
- 2 tsp vanilla extract
- 1 and 1/2 tsp cornstarch
- 3/4 cup full-fat sour cream, at room temperature
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp ground cloves
- 1/4 cup all-purpose flour
- 1/2 cup old-fashioned whole rolled oats
- 1/4 cup brown sugar, packed
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup cold salted butter, cubed
- 1 cup granulated sugar
- 6 tbsp salted butter, cubed
- 1/2 cup + 1 tbsp heavy cream
- pinch of flaky sea salt

Instructions
- Prep: Read through the recipe before starting to ensure you have everything ready.
- Make the Apple Filling: Peel and slice the apples and cook with all filling ingredients for 8-14 minutes until tender.
- Make the Crust: Preheat oven to 350°F (175°C), mix crust ingredients, press into a pan, and bake for 10 minutes.
- Make the Cheesecake: Beat cream cheese, add sugar and eggs, stir in other ingredients, pour half into the crust, add apple filling, top with the remaining batter.
- Prep Water Bath: Place cheesecake pan in the oven with a roasting pan below it filled with boiling water.
- Bake: Bake for 90 minutes or until set, then cool in the oven for an hour.
- Cool & Chill: Transfer to a wire rack and chill in the fridge for at least 6 hours.
- Make Crumble Topping: Mix and bake topping ingredients at 350°F (175°C) until crumbly.
- Make Salted Caramel Sauce: Prepare your preferred recipe and let it cool.
- Make Apple Pie Topping: Repeat apple filling steps using thicker slices.
- Serve + Store: Top cheesecake with apple topping, crumble, and caramel sauce. Store leftovers in the fridge.
