Ingredients
- 2 lbs finely chopped spinach
- 2 cups milk
- 1 piece clove
- ¼ cup all-purpose flour
- ⅓ cup chopped onion
- 1 bay leaf
- 6 tbsp butter
Instructions
- Wash and clean the spinach carefully, removing stems and chopping it into small pieces.
- In a pot, heat the butter until melted.
- Add the flour to the melted butter, creating a paste and then incorporate the bay leaf, chopped onion, and clove.
- Gradually whisk in the milk, ensuring smoothness, and bring to a boil before simmering for a few minutes.
- Remove the clove and bay leaf from the pot.
- In a separate pot, cook the chopped spinach until tender, about 1-2 minutes, then chop it finely in a food processor.
- Add the finely chopped spinach to the sauce, mixing thoroughly and heating gently for about 5 minutes.

Notes
Opt for fresh spinach for the best texture and flavor. Whole milk provides creaminess, but you can substitute with 2% milk for a lighter version.
