A delicious and healthy meal option combining creamy avocado, nutritious soft-boiled eggs, and hearty rustic rye bread.
Ingredients
- 2 slices rustic rye bread
- 1 ripe avocado
- 2 eggs
- Salt to taste
- Pepper to taste
- Cherry tomatoes (for garnish)
- Olive oil (optional)
Instructions
- Bring a pot of water to a boil and gently add the eggs. Boil for about 6-7 minutes for soft-boiled eggs.
- While the eggs are boiling, toast the rustic rye bread until golden brown.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt and pepper.
- Once the eggs are done, remove them from the water and place them in ice water to stop the cooking process. Peel the eggs once cooled.
- Spread the mashed avocado on the toasted rye bread.
- Top each toast with a soft-boiled egg, sliced in half.
- Garnish with halved cherry tomatoes and a drizzle of olive oil if desired.
- Serve immediately.
Notes
Enjoy fresh; leftover mashed avocado can be stored in an airtight container for up to a day.
