Description

A delicious and healthy meal option combining creamy avocado, nutritious soft-boiled eggs, and hearty rustic rye bread.


Ingredients

  • 2 slices rustic rye bread
  • 1 ripe avocado
  • 2 eggs
  • Salt to taste
  • Pepper to taste
  • Cherry tomatoes (for garnish)
  • Olive oil (optional)


Instructions

  1. Bring a pot of water to a boil and gently add the eggs. Boil for about 6-7 minutes for soft-boiled eggs.
  2. While the eggs are boiling, toast the rustic rye bread until golden brown.
  3. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt and pepper.
  4. Once the eggs are done, remove them from the water and place them in ice water to stop the cooking process. Peel the eggs once cooled.
  5. Spread the mashed avocado on the toasted rye bread.
  6. Top each toast with a soft-boiled egg, sliced in half.
  7. Garnish with halved cherry tomatoes and a drizzle of olive oil if desired.
  8. Serve immediately.

Notes

Enjoy fresh; leftover mashed avocado can be stored in an airtight container for up to a day.
