Ingredients
- 2 cups potatoes, diced
- 2 cups carrots, sliced
- 2 cups zucchini, chopped
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the diced potatoes, sliced carrots, and chopped zucchini in a large bowl.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, dried thyme, salt, and pepper.
- Toss the vegetables to coat evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes or until the vegetables are tender and golden, stirring halfway through.
- Serve warm.
Notes
For added crispiness, increase the oven temperature to 425°F (220°C) for the last 5 minutes of roasting. Allow leftovers to cool before storing.
