Description

A comforting roasted tomato soup made with fresh tomatoes and garlic, perfect for chilly days.


Ingredients

  • 2 pounds ripe tomatoes, halved
  • 1 onion, chopped
  • 4 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the tomatoes, onion, and garlic on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast in the oven for about 30-35 minutes until the tomatoes are soft.
  4. Transfer the roasted vegetables into a pot and add vegetable broth.
  5. Bring to a simmer and blend until smooth.
  6. Serve hot, garnished with fresh basil.

Notes

For added richness, stir in a splash of cream or milk before serving.
