Description
A comforting roasted tomato soup made with fresh tomatoes and garlic, perfect for chilly days.
Ingredients
- 2 pounds ripe tomatoes, halved
- 1 onion, chopped
- 4 cloves garlic, peeled
- 2 tablespoons olive oil
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Place the tomatoes, onion, and garlic on a baking sheet and drizzle with olive oil. Season with salt and pepper.
- Roast in the oven for about 30-35 minutes until the tomatoes are soft.
- Transfer the roasted vegetables into a pot and add vegetable broth.
- Bring to a simmer and blend until smooth.
- Serve hot, garnished with fresh basil.
Notes
For added richness, stir in a splash of cream or milk before serving.
