Description
Delicious and nutritious roasted sweet potatoes that can be enjoyed as a side dish, in salads, or as a main vegetarian attraction.
Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
- 2 tablespoons melted coconut oil
- 3/4 teaspoon fine sea salt
- 1 tablespoon light brown sugar
- For Seasoned Roasted Sweet Potatoes:
- 2 tablespoons olive oil
- 3/4 teaspoon fine sea salt
- 1/4 teaspoon pepper
- 1/2 teaspoon ground chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cube the sweet potatoes into 1/2-inch pieces.
- Add the sweet potatoes to your largest sheet pan and drizzle the melted coconut oil over the top.
- Sprinkle the salt and brown sugar on top of the potatoes.
- Toss the sweet potatoes to ensure they are well coated in the oil, salt, and sugar mixture.
- Spread the sweet potatoes into an even layer, making sure they aren’t overlapping.
- Roast in the oven, flipping every 10–15 minutes. Cook for a total of 27–35 minutes, aiming for around 30 minutes for the best results.
- For Seasoned Roasted Sweet Potatoes, follow the same steps but drizzle with olive oil and add spices before tossing.
Notes
Cut sweet potatoes uniformly for even cooking, and avoid overcrowding the pan. Experiment with different spices for variety.
