Ingredients
- 8 ounces ricotta cheese
- 1 cup strawberries, hulled and halved
- 2 tablespoons honey
- 1 tablespoon olive oil
- 4 slices of bread
- Salt to taste
- Fresh mint for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place sliced strawberries on a baking sheet, drizzle with olive oil and honey, and sprinkle with a pinch of salt. Roast for 20 minutes.
- In a bowl, whip the ricotta cheese until smooth.
- Toast the bread slices until golden brown.
- Spread the whipped ricotta on the toasted bread, top with roasted strawberries, and garnish with fresh mint if desired. Serve immediately.
Notes
Use full-fat ricotta for the creamiest result; part-skim ricotta or a dairy-free substitute can be used as alternatives. Ensure the bread used is sturdy enough to hold the toppings.
