Description

Ingredients

  • 8 ounces ricotta cheese
  • 1 cup strawberries, hulled and halved
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 4 slices of bread
  • Salt to taste
  • Fresh mint for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place sliced strawberries on a baking sheet, drizzle with olive oil and honey, and sprinkle with a pinch of salt. Roast for 20 minutes.
  3. In a bowl, whip the ricotta cheese until smooth.
  4. Toast the bread slices until golden brown.
  5. Spread the whipped ricotta on the toasted bread, top with roasted strawberries, and garnish with fresh mint if desired. Serve immediately.

Notes

Use full-fat ricotta for the creamiest result; part-skim ricotta or a dairy-free substitute can be used as alternatives. Ensure the bread used is sturdy enough to hold the toppings.
