Ingredients

  • 1 cup strawberries, hulled and halved
  • 1 tablespoon sugar
  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 4 slices of whole-grain bread
  • Fresh mint leaves (for garnish)
  • Salt to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the strawberries with sugar and place them on a baking sheet. Roast in the oven for about 20 minutes until they are soft and caramelized.
  3. Mix the ricotta cheese, honey, vanilla extract, and a pinch of salt until creamy.
