Ingredients

  • 1 medium pumpkin, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • Salt to taste
  • Pepper to taste
  • Olive oil
  • Pumpkin seeds for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced pumpkin with olive oil, salt, and pepper, and roast in the oven for 25-30 minutes until caramelized.
  3. In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
  4. Add the minced garlic and spices, and cook for another minute.
