Ingredients
- 1 medium pumpkin, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- Salt to taste
- Pepper to taste
- Olive oil
- Pumpkin seeds for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced pumpkin with olive oil, salt, and pepper, and roast in the oven for 25-30 minutes until caramelized.
- In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
- Add the minced garlic and spices, and cook for another minute.
