Description
This festive board is a vibrant centerpiece for holiday gatherings, featuring earthy roasted beets and sweet potatoes, creamy whipped feta, and tart cranberries.
Ingredients
- 2 medium beets, peeled and sliced (300 g)
- 2 medium sweet potatoes, peeled and sliced (400 g)
- 2 tablespoons olive oil (30 ml)
- 1/2 teaspoon salt (3 g)
- 1/4 teaspoon black pepper (1 g)
- 4 oz feta cheese (115 g)
- 2 tablespoons Greek yogurt (30 g)
- 1 teaspoon olive oil (5 ml)
- 1/3 cup dried cranberries (40 g)
- 1/4 cup toasted walnuts (30 g)
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the sliced beets and sweet potatoes with olive oil, salt, and black pepper until evenly coated.
- Spread the vegetables in a single layer on a baking sheet, ensuring space between them for even roasting.
- Roast in the preheated oven for 25–30 minutes, or until tender and starting to caramelize.
- While the veggies are roasting, prepare the whipped feta by blending the feta cheese, Greek yogurt, and 1 teaspoon of olive oil in a food processor until smooth.
- Once done, let the vegetables cool slightly, then arrange them on a large serving board.
- Add dollops of whipped feta, sprinkle with dried cranberries and toasted walnuts, and garnish with fresh thyme.
- Serve warm or at room temperature.
Notes
For uniform roasting, slice vegetables to the same thickness. You can also prepare the vegetables a day ahead and reheat before serving.
