A delightful drink combining the tangy taste of rhubarb with zesty lemon for a refreshing summer beverage.


Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar, divided
  • 4 cups water
  • 1 cup freshly squeezed lemon juice (about 4-6 lemons)
  • Ice cubes
  • Lemon slices and fresh mint for garnish (optional)


Instructions

  1. Combine the chopped rhubarb and 1 cup of sugar with 1 cup of water in a saucepan. Bring to a boil over medium heat, stirring occasionally.
  2. Simmer for about 10 minutes, or until the rhubarb has softened.
  3. Remove from heat and strain the mixture through a fine-mesh sieve into a bowl or pitcher to separate the liquid from the rhubarb solids.
  4. Mix the rhubarb syrup with the remaining 3 cups of water and the freshly squeezed lemon juice in a large pitcher. Stir well.
  5. Serve over ice cubes and garnish with lemon slices and fresh mint if using. Enjoy!

Notes

Feel free to adjust the sweetness with extra sugar or a sugar alternative. Chill before serving for the best flavor.
