A delightful drink combining the tangy taste of rhubarb with zesty lemon for a refreshing summer beverage.
Ingredients
- 2 cups rhubarb, chopped
- 1 cup sugar, divided
- 4 cups water
- 1 cup freshly squeezed lemon juice (about 4-6 lemons)
- Ice cubes
- Lemon slices and fresh mint for garnish (optional)
Instructions
- Combine the chopped rhubarb and 1 cup of sugar with 1 cup of water in a saucepan. Bring to a boil over medium heat, stirring occasionally.
- Simmer for about 10 minutes, or until the rhubarb has softened.
- Remove from heat and strain the mixture through a fine-mesh sieve into a bowl or pitcher to separate the liquid from the rhubarb solids.
- Mix the rhubarb syrup with the remaining 3 cups of water and the freshly squeezed lemon juice in a large pitcher. Stir well.
- Serve over ice cubes and garnish with lemon slices and fresh mint if using. Enjoy!
