Description

A tangy, sweet, and spicy homemade condiment that enhances various dishes.


Ingredients

  • 3/4 cup sugar
  • 1/3 cup cider vinegar
  • 1 tablespoon minced garlic
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 to 1/4 teaspoon ground cloves
  • 4 cups coarsely chopped fresh or frozen rhubarb, thawed
  • 1/2 cup chopped red onion
  • 1/3 cup golden raisins
  • 1 teaspoon red food coloring (optional)


Instructions

  1. Combine the sugar, cider vinegar, minced garlic, ground ginger, ground cumin, ground cinnamon, crushed red pepper flakes, and ground cloves in a large saucepan. Bring to a boil over medium heat.
  2. Reduce the heat and simmer uncovered for about 2 minutes or until the sugar is fully dissolved.
  3. Add the chopped rhubarb, red onion, and golden raisins. Cook and stir over medium heat until the rhubarb is tender and the mixture slightly thickens, about 5 to 10 minutes.
  4. If desired, stir in red food coloring for a vibrant color.
  5. Cool completely before transferring to a jar. Store in the refrigerator.

Notes

Use fresh rhubarb for the best flavor, and adjust sweetness to your preference.
