Elegant red velvet macarons with creamy mascarpone frosting – a perfect combination of sophistication and sweetness for any occasion.
Ingredients
- 130 g powdered sugar
- 120 g almond flour
- 7 g cocoa powder
- 105 g egg whites
- 100 g granulated sugar
- 1 tsp vanilla paste
- 1/2 tsp red food gel
- 113 g heavy cream (cold)
- 50 g granulated sugar (for frosting)
- 113 g mascarpone (cold)
- 1/2 tsp vanilla paste (for frosting)
Instructions
- Preheat your oven to 150°C (300°F).
- Sift together the powdered sugar, almond flour, and cocoa powder in a bowl.
- In a separate bowl, whisk the egg whites until foamy, then gradually add the granulated sugar until stiff peaks form.
- Add vanilla paste and red food gel to the egg whites, folding gently.
- Combine dry ingredients with the egg whites, folding until the batter reaches a lava-like consistency.
- Transfer batter to a piping bag and pipe small circles onto a lined baking sheet.
- Tap the baking sheet to release air bubbles and let shells sit for 30-45 minutes to form a skin.
- Bake for 14-16 minutes, then cool on a wire rack.
- For frosting, whip heavy cream with 50 g sugar until soft peaks form.
- In another bowl, mix mascarpone with 1/2 tsp vanilla paste until smooth.
- Fold whipped cream into mascarpone until fully combined.
- Pair macaron shells, pipe frosting onto one, and sandwich with another shell.
Notes
For best results, age egg whites overnight before using. Store assembled macarons in an airtight container in the refrigerator for up to 5 days.
