Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
- In a large mixing bowl, combine vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar. Mix until smooth.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Divide the batter evenly among the prepared cake pans.
- Bake for about 25-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, and mix until creamy.
- Once cakes are cooled, layer them with cream cheese frosting in between and on top.
- Decorate as desired and serve.
Notes
Use room temperature ingredients for best results. Don’t skip the vinegar for moisture.
