Description

A vibrant and nourishing dish that brings together the flavors of the Mediterranean with salmon, fresh vegetables, and feta cheese.


Ingredients

  • 2 hard-boiled eggs, halved
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, sliced
  • 4 oz salmon fillet (grilled or baked)
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • Fresh parsley, chopped
  • Olive oil and lemon juice for dressing


Instructions

  1. Start by preparing the salmon; grill or bake it until cooked through.
  2. While the salmon is cooking, prepare the vegetables and eggs.
  3. On a serving plate, combine the hard-boiled eggs, cherry tomatoes, and cucumber.
  4. Once the salmon is ready, place it on top of the salad mixture.
  5. Add olives and feta cheese.
