Description

A delicious and easy-to-prepare brunch dish that combines the classic taste of French toast with juicy blueberries.


Ingredients

  • 8 slices of bread
  • 2 cups blueberries (fresh or frozen)
  • 6 large eggs
  • 2 cups milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing)
  • Maple syrup (for serving)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish with butter.
  2. Cut the bread into cubes and spread half of them in the greased baking dish.
  3. Sprinkle half of the blueberries over the bread cubes.
  4. In a bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
  5. Pour the egg mixture evenly over the bread and blueberries.
  6. Top with the remaining bread cubes and blueberries.
  7. Cover the dish with foil and let it sit for about 30 minutes or refrigerate overnight.
  8. Bake in the preheated oven for 30 minutes covered with foil, then remove the foil and bake for an additional 15 minutes until golden brown.
  9. Serve warm with maple syrup.

Notes

For the best flavor, use stale bread or experiment with different types like brioche or challah.
