A delicious and easy-to-prepare brunch dish that combines the classic taste of French toast with juicy blueberries.
Ingredients
- 8 slices of bread
- 2 cups blueberries (fresh or frozen)
- 6 large eggs
- 2 cups milk
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Butter (for greasing)
- Maple syrup (for serving)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish with butter.
- Cut the bread into cubes and spread half of them in the greased baking dish.
- Sprinkle half of the blueberries over the bread cubes.
- In a bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
- Pour the egg mixture evenly over the bread and blueberries.
- Top with the remaining bread cubes and blueberries.
- Cover the dish with foil and let it sit for about 30 minutes or refrigerate overnight.
- Bake in the preheated oven for 30 minutes covered with foil, then remove the foil and bake for an additional 15 minutes until golden brown.
- Serve warm with maple syrup.
Notes
For the best flavor, use stale bread or experiment with different types like brioche or challah.
