A delightful dish perfect for breakfast or brunch, combining the sweetness of blueberries with the comforting texture of French toast.
Ingredients
- 1 loaf of bread, cut into cubes
- 2 cups blueberries (fresh or frozen)
- 6 large eggs
- 2 cups milk
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Butter for greasing
- Powdered sugar for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a casserole dish with butter.
- In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, and cinnamon until fully combined.
- Layer half of the bread cubes in the bottom of the casserole dish, then sprinkle half of the blueberries on top. Repeat the layers with the remaining bread and blueberries.
- Pour the egg mixture evenly over the layered bread and berries, pressing down gently to soak the bread.
- Let it sit for 15-20 minutes for the bread to absorb the egg mixture.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is set.
- Remove from oven and let it cool slightly before serving. Dust with powdered sugar if desired.
Notes
For best texture, use stale bread. Feel free to mix in other berries. Assemble the night before for richer flavors.
